Enchilada Stuffed Peppers instructions

  1. Preheat oven 350.
  2. In large skillet, cook beef with onions.
  3. Add carrots and cook til soft.
  4. Add spinach and sauce.
  5. Cut peppers in half lengthwise. Remove stem, seeds and membranes.
  6. Spoon a little beef filling into bottom of an 8×8 baking pan.
  7. Place peppers in baking dish.
  8. Spoon filling into each pepper.
  9. If any filling remains, pour over top.
  10. Cover with foil and bake 45 minutes or until peppers are soft.
  11. Remove foil, add cheese and return to oven.
  12. Cook until cheese is melted.
