  1. Take of bag dry pinto beans.
  2. Prepare of grape seed oil.
  3. Get of diced red or white onion.
  4. Take of jarred minced garlic.

  7. Provide of shredded mexican cheese.

  1. pick beans by taking out bad beans, rocks, dirt, etc.. rinse beans well..
  2. place beans in a pot with 9 cups of water..
  3. bring beans to a boil and lower to a simmer..
  4. simmer for 3 hours.. stirring frequently and adding more water as neccessary. when beans are cooked through do not add more water. let it cook down so it thick and resembling chunky refried beans..
  5. in a skillet place onion, oil and garlic. saute until onion is transparent and cooked through. add salt,pepper and chili powder..
  6. mix well. then add beans.. mash beans with rest of ingredients..
  7. fry and mix for 10 – 15 minutes. scraping bottom and sides. stirr a lot so it doesn't burn..
  8. when heated through and all mashed up. transfer to a serving bowl. sprinkle with cheese and minced cilantro..
  9. note: if u don't have mexican chili powder regular chili powder is fine. if u don't have cilantro u can sub for minced fresh parsely. if u don't have grape seed oil u can sub for olive oil or veggie oil..
